Pancake puffs, nothing is better for breakfast or a late night snack. I've been making this quick and easy recipe since college & have been craving these for the past few weeks.I've been meaning to get around to making these simply sweet & delicious pancake puffs, and just hadn't found the time. But, this morning after waking up dreaming of these, I decided all excuses aside.
What you will need:
-1 medium mixing bowl
-1 cup measuring cup
-Pancake Mix
-Filling of your choice ( I used nutella, peanut butter, & strawberry jam. But in the past I have added already browned breakfast sausage before too. Really you can fill these with anything.)
-1 mini muffin pan
-nonstick spray
First make you pancake batter as usual. To save yourself some time you might also want to preheat your oven to 350 degrees. (that way you can just make em & bake em.)

First make you pancake batter as usual. To save yourself some time you might also want to preheat your oven to 350 degrees. (that way you can just make em & bake em.)
Then Spray your mini muffin pan with non-stick cooking spray.
Next fill your mini muffin pan about half way with the pancake batter.
Then comes the filling! I put about a tsp. worth of filling in each of the muffin cups.
(nutella is the furthest row, then peanut butter, then the jam.)
Quick tip: [Try to keep your filling in the center as best as you can, otherwise it tends to fall out of the sides.]
After the filling is put in cover the tops with the remaining pancake batter. Try not to over fill them, otherwise they tend to turn out "not so pretty".
Pop these puppies into the oven at 350 degrees for about 10 minutes or until the tops are a nice golden brown.
I always check mine with a fork before taking them out of the oven just because with any kind of filling the centers might take a little longer to cook all of the way through. (mine aren't that golden, but I was too impatiently hungry for them haha.)
Just pop the pancake puffs out of the muffin pan with a spoon & serve with either a side of syrup or a la mode.
